An image featuring a bowl of shredded chicken along with the added items: a small bowl of crumbled goat's cheese, a bowl of shredded mozzarella, a bottle of sweet chili sauce, and a head of broccoli

Ingredients:

  • Preferred pizza dough, ready to roll (Here's our favorite dough recipe)
  • Cooked chicken, shredded or cubed - consider the pre-cooked chicken packs in the grocery store
  • Sweet chili sauce, Thai-style
  • Sun-dried tomatoes, chopped (a small jar is more than enough)
  • Fresh broccoli florets, blanched (a min in the microwave will help here!)
  • Creamy goat cheese, crumbled
  • Mozzarella cheese, shredded
  • Extra virgin olive oil

Instructions :

  1. Prepare the Dough: Stretch your dough out to a pizza shape, and place on a floured surface.  You can pop it into your preheated Luna Pizza Oven for a minute, turning halfway through to get ready to accept all these toppings. When it comes out, flip it over onto your re-floured peel.
  2. Broccoli Prep: In a skillet, heat a bit of olive oil, add the broccoli, and sauté until tender-crisp or pop in the microwave with a splash of water for 1-2 mins.
  3. Assemble: Spread the sweet chili sauce over the crust, then evenly distribute the chicken, sun-dried tomatoes, and broccoli.
  4. Cheese Topping: Generously sprinkle goat cheese and mozzarella over the toppings.
  5. Bake to Perfection: Return to your heated Luna Pizza Oven and bake until the cheese is beautifully melted and the crust turns a perfect golden brown. Be sure to turn occasionally to keep from burning on one side.
